Diet Cookie Recipes: Crunchy Banana Cocoa Rounds

Diet cookie recipes don't have to be boring - far from it! Reduced fat, sugar and calorie cookies can be enticingly delicious as well as good for you. This diet cookie recipe combines crunchy cereal and sweet banana with a hint of cocoa and cinnamon for treat that satisfies as well as saves calories. Each finished cookie clocks in at around 95 calories, and provides a helping of dietary fiber and potassium. And are they filling!
For variations on this diet cookie recipe, for a very minimal increase in calories, you could add a handful of chopped, dried figs, raisins, or walnuts. You can also replace the cocoa with two tablespoons of sugar-free maple syrup for a "blonde" version. You can also try making it with other types of cereal, but stick to bran for maximum health benefits.
Diet Cookie Recipe for Crunchy Banana Cocoa Rounds:
2 1/4 cups Chex multi-bran cereal, or the multi-bran cereal of your choice
1 cup rolled or quick-cooking oats
3/4 cup non-fat powdered milk
2 tablespoons unsweetened cocoa powder
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 large ripe banana, mashed
4 tablespoons butter, softened
1/2 cup Splenda or the sucralose-based sweetener of your choice
2 eggs
1/2 cup applesauce mixed with 1 teaspoon baking soda
1 1/2 teaspoons vanilla
Directions:
Preheat oven to 375 degrees. Combine the cereal, oats, powdered milk, cocoa, baking powder, salt, and cinnamon in a large bowl. Stir well to combine and set aside.
In another large bowl, blend the banana, butter, sweetener, eggs, applesauce mixture, and vanilla at medium speed with an electric mixer until well incorporated. Stir in the dry ingredients until thoroughly combined and allow to stand for five minutes. Drop by heaping tablespoons onto an ungreased cookie sheet. Bake for 12-15 minutes. Allow to cool slightly before transferring to a wire rack to cool completely.
